Requirements
For 500g Low Carb Marzipan
250g Almond flour (or whole white almonds)
250gr Green Sugar Powdered Sugar
200g Low-carb chocolate (I used Smart Chocolate with Stevia from Body & Fit)
1 egg white (or 2 tablespoons of water if you want to keep the marzipan longer or don't want to use an egg)
Possibly cocoa or food coloring
Preparation method:
1. Grind the almonds finely in a food processor or hand blender
2. Add the remaining ingredients and grind to a smooth, firm paste
3. If it remains too sandy you can add some water to make it a smoother firm paste
4. Add food coloring or cocoa if you want to give the low-carb marzipan a color.
5. Knead the dough again and roll the marzipan into 1 large roll or 2 smaller rolls.
6. Skip steps 4 and 5 if you want to use the low-carb marzipan without the chocolate
7. Melt the chocolate bar in the microwave for max 1 minute until it is almost melted
8. Brush the roll(s) of marzipan with the chocolate using a brush
9. Wrap in aluminum or transparent foil and let it stiffen in the refrigerator for a day
10. You can now use the marzipan
