Low Carb Jam Recipe (Sugar Free)

Requirements

500g fresh or frozen fruit (I used AH frozen raspberries)

4gr Agar Agar (I used Biovegan Agar Agar)

3-4 Tablespoons Natural Sugar Substitute (I used Green Sugar Granulated Sugar , available in our online store)

Or 85gr Green Sugar Gelling Sugar , for sale in our webshop (instead of Agar Agar & Sweetener)


Preparation method:

1. Place the fruit in a pan
2. Let the fruit defrost over low heat (skip this step if you are using fresh fruit)
3. Add the Agar Agar and the sugar substitute
4. Bring to the boil and stir regularly
5. When it boils, you can puree the mixture with a hand blender if desired. If you prefer chunks of fruit in the jam, you can mash it a bit more with a fork
6. Taste to see if the jam is sweet enough and add extra sugar substitute if desired
7. Let it simmer for another 2 minutes on low heat, stirring well.
8. Put the jam in a well- sealed storage container and let it cool.
9. Once the jam has cooled, store it in the refrigerator.
10. You can stir the jam once it has completely cooled if you want a looser texture.

From 500g of fruit I got 435g of jam.

The jam will keep for about 20 days in the refrigerator.
