Ingredients:
250g grated zucchini
30g onion
1 clove of garlic
4 eggs
225g almond flour
50g melted (cream) butter
50g broken linseed
75g cream cheese
25g grated cheese
25g sunflower seeds
1 tsp xanthan gum
1 tsp baking powder
¼ tsp bouillon powder or salt
Preparation method
- Preheat the oven to 180 degrees
- Chop the onion and press the garlic clove
- Grate the zucchini
- Place the grated courgette in a tea towel and squeeze out the excess moisture
- Place everything (zucchini, onion, garlic, butter, almond flour, eggs, flaxseed, cream cheese, grated cheese, xanthan gum, baking powder, spices) in the food processor and briefly grind into a dough.
- Grease the baking tin with some butter
- Pour the dough into the mold
- Bake the courgette bread for 55 minutes at 180 degrees. Check the doneness with a skewer
- Let the bread cool
- Cut it into slices
